- Cut the peppers into large pieces, removing any pith and seeds.
- Preheat the BBQ or a griddle pan to high. Add the peppers skin side down, working in batches if needed, and cook until nicely charred.
- As soon as the peppers come off the heat, drizzle with red wine vinegar and season with Maldon Smoked Sea Salt. Drizzle with olive oil to serve.
Serving: 4-8 as a side
