- Put the olive oil, lemon peel strips and garlic cloves in a small pan over a medium-low heat. Cook for a few minutes until it smells fragrant and the garlic has softened. Add a pinch of chilli flakes and immediately remove from the heat. Allow to cool.
- Add the olives, chopped parsley and a pinch of Maldon Original Sea Salt to the cooled oil. Mix well and serve.
